Banana Strawberry Muffins

 Ingredients

  • 1 cup oats
  • 1 ripe banana
  • 1/4 cup unsweetened applesauce
  • 1 flax egg (1 Tbsp ground flaxseed, 3 Tbsp water)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp pink salt
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 2 Tbsp maple syrup
  • 2 Tbsp Black Magic Latte
  • Dash of nut/seed milk to thin if needed while blending
  • 1/2 cup of chopped strawberries

With you, every step of the way

  1. Make flax egg and set aside until it forms a gel-like consistency (~5 minutes).
  2. Preheat oven to 350F.
  3. In a blender, add oats, bananas, applesauce, flax egg, baking powder, baking soda, salt, cinnamon, vanilla, maple syrup, and black magic latte.
  4. Blend it up! Add some nut milk to thin it if needed.
  5. Lightly oil a muffin tin and transfer the batter.
  6. Top with chopped strawberries.
  7. Bake for 20-22 minutes.
