Banana Strawberry Muffins

Ingredients
- 1 cup oats
- 1 ripe banana
- 1/4 cup unsweetened applesauce
- 1 flax egg (1 Tbsp ground flaxseed, 3 Tbsp water)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp pink salt
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 2 Tbsp maple syrup
- 2 Tbsp Black Magic Latte
- Dash of nut/seed milk to thin if needed while blending
- 1/2 cup of chopped strawberries
With you, every step of the way
- Make flax egg and set aside until it forms a gel-like consistency (~5 minutes).
- Preheat oven to 350F.
- In a blender, add oats, bananas, applesauce, flax egg, baking powder, baking soda, salt, cinnamon, vanilla, maple syrup, and black magic latte.
- Blend it up! Add some nut milk to thin it if needed.
- Lightly oil a muffin tin and transfer the batter.
- Top with chopped strawberries.
- Bake for 20-22 minutes.
